Jackrabbit is a hotel restaurant (in the Duniway Hotel) owned by celebrity chef Chris Cosentino (who also owns Cockscomb in SF and Acacia House in Napa). The restaurant is in downtown PDX so the location is convenient. Chris Cosentino likes to emphasize offal in some of his dishes. The good news is that I love offal. This is a solid dish. There is tableside service----a server will come to your table with a can opener and what looks like a can of Dinty Moore. He/she opens the can and dumps the contents in another bowl. Mine had arugula and grilled bread. The presentation is cool. I'd recommend trying this dish at least once.
