A scouting report on bread? Seriously - bread?! Why would you do that? The more appropriate question: after trying Kindred's infamous homemade magical Milk Bread, how could one NOT write up a scouting report? This bread, which is brought to the table as you are seated at Kindred (my hands-down favorite restaurant in NC and one of my favorites in the country, in general), is simply put, the best bread I've ever had in my life. I'm not going to claim that you need to try this before you die (the criteria for a HOF rating), but it is one notch down from that, clocking in with a FR rating. It's made using the Japanese Tangzhong method - I have no idea what that means, but I'm so happy that it was invented. It is served warm, topped with just the right amount of salt and accompanied by house-cultured butter and it is one of the most addicting dishes you'll ever try. It's almost upsetting that it's so good, because you can't fill up on this stuff too much - you must leave room for the handmade pastas and the rotating list of fresh fish entrées that fill out the rest of the menu.
