I first went to The Cowfish when I spent a summer in Charlotte, NC. I loved the unique concept of the restaurant, which is described as a Sushi Burger Bar. I loved it so much, I was able to play a role in helping bring the restaurant to my hometown of Birmingham, Alabama. Having recently opened, I went to check it out for lunch two days in a row. The great thing about this restaurant is that you can go with a group of friends or family with a variety of food preferences, and everyone is guaranteed to leave happy. One of the most unique things about The Cowfish is the “Burgushi” concept. As you can imagine, it consists of “burgers” with sushi ingredients, or sushi with burger ingredients. On my first trip, I went Burgushi and got the Turfin' Surfer Roll. A sushi roll, with tuna, red onion, cucumber, daikon sprouts and tempura flakes, it only gets better once you find out that each roll is topped with filet mignon and Koji marinated scallops! For the adventurous eater like me, this combo was right up my alley. The filet mignon, tuna, and scallops made for a flavorful combo, while the cucumber added freshness to the roll, and the tempura flakes contributed to the texture. The roll is drizzled in eel sauce, giving it a sweet layer as well. This roll was delicious. On my return trip, I went with the Thundering Herd Bison Burger. The Bison was cooked perfectly, and I could really tell that I was eating bison with the leanness and tenderness of the patty. This version includes white cheddar, a smooth “avocado salsa” and a chipotle aioli. I added a side of perfectly fried pickles as a great complement. For a location that was just getting its feet wet, the service was great and the environment was lively. The owner, Marcus, and the General Manager, Scott, were extremely nice and personable. You can tell they really care about their customers at The Cowfish. If the point of the post was to rate the restaurant, I would definitely rate it an all-star restaurant, but I will give each of these dishes a starter rating because I will likely get something different every time I go. Can’t wait to go back!
