Republique is one of the hottest restaurants in LA and Pastry Chef Margarita Manzke is considered one of the best in the business as witnessed by her James Beard finalist nod in the Pastry Chef category in 2017. I love desserts and what I enjoyed about this was how refreshing it was: pineapple, passionfruit, coconut, tapioca, and pandan ice cream worked in concert to form a cohesive dessert. I had 4 of her desserts and this was the best of them.
