I am from Seattle but in Salt Lake this week visiting my brother. After a short run in the summer heat this morning, I was looking for a healthy option for lunch. Right around the corner in the East Mill Creek section of Salt Lake was Roots Cafe and it turned out to be the perfect choice. If you are a beet lover like me, the Roasted Beet and Spinach Salad is for you. Garden fresh beets roasted and chilled then sliced and paired with strawberries on a bed of fresh spinach leaves will get your taste buds going. Topped with goat cheese crumbles, toasted almonds, balsamic dressing, and avocados as an extra add this was one of my favorite salads. My 24 year old daughter who was with me had a tasty veggie wrap with a fantastic side salad (black eyed pea salad with fresh corn and red onion).
