Who doesn't like pizza? It's a dish I've never outgrown, and maybe more importantly, it fits in my budget! My favorite neighborhood place just blocks from my house is Vic's Pizzeria. Now I'm not a traditionalist and that means if you have some combination of ingredients that works for a slice of pie, than I'm all for it! And that's a Vic's trademark. Today I'm scouting the "Lovely Rita," presumably named for the Beatles number. Everything is hand prepped at Vic's and staff makes the pizza dough fresh daily. Their crust is not too thin and not too thick, for my preferences, just right. The Lovely Rita features Vic's red sauce, mozzarella, sweet potato, sun dried tomato, cashews, feta, with a drizzle of basil pesto (also made fresh at Vic's). Sound weird? Trust me, it works.
Chase that down with one of their Northwest brews, and you're talking about a very satisfying meal (though you may require more than once slice). I think I've talked myself into another Vic's session right now!
