Butter Burger at Carson Kitchen in Las Vegas, NV. It seems like everyone has their own idea of a great burger, but two of my biggest criteria are that the patty has to be thick (not a fan of skinny burgers) and when you bite into it, the meat has to be flavorful and juicy. Enter the Butter Burger. It's pan fried in clarified butter, which is butter that is heated to take out the milk solids. This allows the burger to be cooked in much higher heat without getting burned, and as a result, the burger winds up moist and juicy on the inside. Loved this tasty burger, as the thick patty was full of flavor and had me asking for multiple napkins with how juicy it was on the inside. The bun was toasted and warm and had a nice char on the outer rim. Carson Kitchen is a local joint run by renowned Vegas chef Kerry Simon and is located downtown just north of the Strip. Super friendly service in a quaint and modern/urban space. I also loved their lamb gyro tacos. Open until 10pm Sun-Wed but until 11pm Thu-Sat.
