Sausage and Cheese Kolache at Slovacek's in West, TX. So first off the town of West, Texas is not in west Texas. It's about 70 miles south of Dallas, if you are making the drive to Waco or Austin from Dallas. So north-central Texas I guess? Anyways, this area has a large population of people with Czech heritage. Slovacek's is a big gas station that also sells kolaches, other Czech pastries, and BBQ. The kolache is a breakfast food favorite in Texas (haven't really seen them sold in other states, but they might be popular elsewhere). Similar to a pig in a blanket, it's basically a sausage wrapped in breading. However, kolaches have a soft, fluffy breading as opposed to a flakey, pastry-like breading. It's an amazing road trip food because it's a self-contained, handheld meal. The cheese on the inside is warm, but not to the point where it's liquidy. The breading is salty sweet and the sausage is a little spicy (jalapeƱo sausage also available), so they complement each other well. This one of my favorite places to get kolaches along with Shipley's Donuts (regional chain) and the Czech Stop (also in West, TX).
