In addition to Quintonil's Jorge Vallejo, SUD 777's Edgar Nunez is one of Mexico City's young guns elevating Mexican food in the eyes of the culinary world. The stranger the ingredient, the more intrigued I am. Escamoles are ant larvae and I found that I love it and specifically this dish. Edgar's food is intriguing and challenging but also quite delicious. If one travels to Mexico City, SUD 777 should be near the top of the list.
