Brisket and Pork Ribs at Tejas Chocolate Craftory in Tomball, TX. This place originally started as a bean-to-bar chocolate business, but it has recently transformed itself into a BBQ powerhouse and was subsequently selected by Texas Monthly as the #6 BBQ joint in Texas. Only about a 30-minute wait on a Saturday afternoon, which is pretty reasonable considering its high ranking. This place is located in an old house in Tomball, which is a suburb about 30 miles north of Houston. The town might sound familiar because this is where Minnesota Timberwolves’ wing Jimmy Butler played his high school ball. When eating BBQ, I usually order half lean brisket and half moist brisket to get the full range of flavor. I thought the moist brisket was really good. Rich and well-balanced with a nice pepper bark that was lightly charred. Not your typical smoky, "burnt end" type brisket. The lean brisket was good too, but I thought it was a tad dry (especially upon reheating my leftovers for dinner). The pork ribs were outstanding. Sweet, smoky, and very tender. I've never seen carrot soufflé at a Texas BBQ joint, but I ordered it here and it was amazing. It was sweet with a sponge cake-like texture and it tasted a little bit like flan to me. The cornbread pudding was mediocre in comparison. Finally, I tried their homemade, bean-to-bar chocolate truffles. They were very rich, and I’d recommend the Bananas Foster flavor. All in all, a great find in a small town. I’d definitely go back to try their beef rib, pork belly, and chocolate bread pudding (have heard good things about all of them).
