Dames Chicken and Waffles is a very well known and very popular restaurant located in the triad area of North Carolina. It has three locations currently and was initially established in Durham, NC. The owners stick to the basics (chicken & Waffles) and I don't blame them at all because they are doing fried chicken the right way. The Dueling Rooster is a four piece wing over a classic waffle, two shmears (think flavored butter spread), served with a shot of smokin' Calypso sauce. The sauce is sweet and spicy and compliments the chicken REALLY well. A before and after picture would show that I used the entire sauce and left nothing on the plate. The chicken is really the show of the meal. It is battered with a peppery blend dredge that is light, crispy and does not leave a greasy feeling. The chicken is moist and the portions will not disappoint. You can order your choice of Waffles from classic to sweet potatoe, I decided to go with the blueberry. The waffle is a little doughy to my liking and I was craving for a more crispy bite but the fresh blueberries was a plus. All ingredients were said to be organic and I believed them when tasting the collard greens side dish. The greens were stewed with a spicy kick and melts in your mouth. As a southern kid at heart, I think collards make or break a restaurants resume of side dishes. This one gets my approval. Be sure to check out Dames when in Greensboro, Cary or Durham.
