Usuzukuri at Agave Azul in Playa Del Carmen, Mexico. Usuzukuri (a fancy term for fish that is sliced very thinly), varies among sushi restaurants depending on the quality and type of fish used as well as the preparation. Agave Azul's version was terrific, as their usuzukuri utilized three different types of fish - snapper (the catch of the day), tuna, and salmon. The fish was super fresh and drenched in just the right amount of ponzu sauce, sesame oil, and chives. The flavors mixed well together and having the three different fish in one setting gave it nice variety without having too much of one thing. I also loved their Kobe Beef Tataki. Agave Azul is located in the beautiful Rosewood Mayakoba resort, which undoubtedly has the best service I've ever experienced.
