RyuGin is a 3 Michelin starred restaurant owned by one of the world's greatest chefs---Seiji
Yamamoto. This dessert was absolutely sublime: sake ice cream, sake soufflé with mochi on the bottom. I absolutely love soufflés and this was one of the greatest soufflés I've ever eaten; one of the reasons why is that it was so distinctive.
