One of my favorite pastry chefs in the country is Jiho Kim of 2 Michelin starred The Modern. This was a memorable dessert of quark mousse with pickled rhubarb and white asparagus ice cream, yes you read that correctly. The skill it takes to pull off a dish such as this is quite substantial. And as one can plainly see, jiho's plating skills are world-class.
