After a day floating on The American River and imbibing on watered-down, warm beer, we were craving something refreshing, somewhat filling, and with nutritional value. Franchise fast foods and meat and potatoes-type restaurants were the first Google results, so scrolling down has its rewards.
Bo's menu is simple: 1. Pick roll, bowl, or sandwich then 2. Pick the protein: chicken, beef, shrimp, or tofu. The idea is street food: simple, easy, and delicious.
Because I was hungry, I ordered fresh shrimp rolls and a beef bowl. The shrimp roll was fresh. You can tell that is fresh from the vermicelli noodles. The pictured beef bowl was delicious as well. It had the vermicelli noodles, the beef, sprouts, and lettuce. Add the fish sauce to it and it's perfect. Even though it's carb, it tasted light because of all the freshness. The sauce brought out the meat's flavor, then tapered by the noodles.
Great customer service, too. The owner was there and super friendly. He was avuncular and gave the younger kids popsicles. Even though the name includes 'urban', it's located in a small suburb. If you are in the area, worth the drive for the small town vibe and the food.
