Emma Bengtsson is the current chef of Aquavit and was the second woman in the country to helm a two Michelin starred kitchen. And Aquavit is one of the most influential Nordic restaurants in the country. This dish of King Crab and kelp with beets, juniper and onion screamed Sweden. Emma uses Scandinavian ingredients throughout the entire tasting menu. I really enjoy it because it is so different.
