08/29/17 Let me start by saying this - anything I've ever eaten at The Dumpling Lady has been RT+. Everything that pops out of that little food truck is a legitimate Bigtime Bite. I uncovered this culinary gem at a farmer's market in NoDa a little over a year ago. The co-owner/chef, Qian Zhang, moved to CLT in 2015 and has been crushing the CLT food scene ever since. The husband and wife team source their menu locally and word is starting to really catch on around town - the lines keep getting longer and longer! You can catch their truck at various locations throughout the week - they post their whereabouts on IG. With that being said, this relatively new addition to the menu has become one of my go-to moves. The noodles themselves are a little thicker than what I'm accustomed to (much thicker than ramen noodles, for instance), but I adjusted in about negative two seconds. This dish is rated "3.5/5" spice level, which equates to about as spicy as I can handle without compromising any flavor. I definitely recommend having some water nearby, but it's all relative - this dish isn't nearly as spicy as their Burning Noodles dish, for example. The bottom of the bowl is filled with Sichuan goodness (I think that's the scientific term) and everything is topped with either seasoned ground beef or pork, so make sure to stir this thing up well in order to get the most of each bigtime bite.
