It's hard to mess up guac...as long as ripe avocado takes center stage, all you really need is some salt and lime juice to accentuate everything and it's nearly
impossible to go wrong. With that being said, it's also pretty tough to elevate guac...it's such a simple dish. Most "table side" guacamole is all pretty similar: fresh-squeezed lime, some onions, tomato, cilantro, jalapeño, and maybe some cotija. What makes Cantina 1511's rendition Bigtime? Bacon. More specifically, little crispy bits of jalapeño bacon. It's genius. I hadn't heard of this before experiencing it at Cantina and I wish I would have thought of it myself, because I'd be a millionaire.
