The Wich' Doctor is a laid back, easy going beach spot located two blocks from the sands of Folly Beach, SC. The food here varies from specialty pizzas and sandwiches to daily specials of pork belly ramen and soft shell crab curry. When you walk into the restaurant be sure to look at the specials on the chalkboard first before browsing the main menu. On this occasion, I was craving a nice pizza to squash my appetite from hours on the beach. The Carbonara Pizza was the perfect choice. The pizza is handmade and combines bacon, sweet green peas, parmesan, white sauce with parsley & eggs. Like most pizzas, the make or break ingredient is the pizza dough. The dough at the Wich Doctor is as close as you'll get to New York/Neapolitan style pizza in South Carolina with its chewy texture mixed with burnt edges, random bubbling yeast mounds and hints of saltiness. What makes this pizza great is the white sauce that allows the dough to remain the show while providing a mellow base for the cheese, bacon, peas and eggs. The parmesan cheese is salty without being overpowering and coats the entire pie evenly. A pull of each slice provides a trail of string cheese begging to not be separated from the others. The bacon is thick cut, fatty and has some crispy bites. The sweet peas are a nice touch and merges with the hearty bacon as a textual compliment to the chewy/crispy pizza dough. The eggs are served overeasy and when broken, runs like a yellow river flowing through the peaks and valleys of the bubbly pizza canvas and toppings. This pizza will run you $14 and is a good portion for 2-3 best friends, or just for yourself if you didn't like the presents they gave you for your birthday haha...
