Chicken Kao Soi at Kao Soi Fueng Fah in Chiang Mai, Thailand. Throughout all my travels, this is without a doubt one of my favorite places to eat in the world. Kao Soi (also spelled with combinations of "Khao" and "Soy") is a Thai coconut chicken noodle soup dish that is prevalent in northern Thailand. There are many Kao Soi shops in Chiang Mai (and I've been to them all), but this version at Fueng Fah is my favorite. Owned by a super nice lady who is likely pushing 90 but always at the restaurant, I've run this dish back as many as five times in one sitting. A great Kao Soi broth has a reddish / brownish tint to it and this broth was perfect - light and savory, not too thick and not too thin. Full of flavor with Thai spices, you could taste the coconut milk without it overpowering the dish and they give you a decent amount of chicken. If you ever go to Chiang Mai (my favorite city in Thailand), don't leave without going here! They don't have a website, but here are the directions: 1. Start at the entrance of D2 Hotel (a trendy hotel in the heart of Chiang Mai near the night market). 2. Walk straight out a hundred yards to the main night market road. 3. Cross the street then walk left a couple short blocks. 4. Take a right at the corner of the alleyway (I think it’s Halal Street). 5. Go past the mosque on your left and about 50 yards up will be Kao Soi Fueng Fah on your left. One dish will only cost you 40 baht (about $1.20)!! This place is BIGTIME!!
