Fully Loaded Fritters is a local food truck in the RDU Triangle area that specializes in (obviously) fritters. That's right, those fritters. Little fried balls filled with, usually just corn. Like a hush puppy with a li'l something extra. I had to try this place one day when I saw it parked across from the place that I work at. I ordered the reuben fritters with a side of sweet sriracha fries. Reubens (a corned beef sandwich with Swiss cheese and sauerkraut on rye) are very popular in Louisiana, so I've had my fair share of them in my life. The reuben fritters were exactly like a true reuben sandwich, too; corned beef, Swiss cheese, but beer-kraut instead of sauerkraut and in a fried ball instead of on rye bread. They were fantastic. It was the best reuben I have ever had, but split into 5 little fried balls. Tons of cheese, a piece of corned beef in every bite, and just enough kraut to add a a sour note to the mixture of tangy-savory goodness already packed inside of those little spheres. And paired with the sweet sriracha fries, which filled in the sweet taste that the dish was missing. It was a fantastic meal. It was a little expensive for a food truck, but certainly worth it for a meal as good as this. I can't say I have ever had anything like it, and I don't think that I ever will. But I'll savor every meeting I have with this awesome truck.
