Panchita specializes in "ancient and contemporary Peruvian Creole food" and they deliver in a spectacular way.
My choice of the Tallarin Criollo is a sauteed creole style noodles with chicken (beef option also available). The sauteed vegetables were prepared to perfection with regard to texture and flavor integrating the creole seasoning base without the base overpowering the ingredients. My experience at Panchita leaves me hoping for another trip to Peru.
