Chicken Mole Taco at Bakersfield in Charlotte, NC. In the picture, the chicken mole tacos have the pickled red onions on them. I don't really order mole too often, but I went with it at Bakersfield and was not disappointed. The mole sauce had a little bit of spice to it and the pulled chicken was really tender. Add in the lime and pickled onions and you have a solid starter taco. Also, I really liked the corn tortillas here, which they make in house. A lot of times corn tortillas are either too soft (and you need two so the taco doesn't fall apart) or too firm compared to flour tortillas. These corn tortillas were soft but didn't fall apart. Only demerit here is that you have to pay for chips and salsa, which is borderline criminal.
