09/21/17 It's difficult for a dish to stand out in Charleston's world-class food scene - the bigtime options in this city are borderline overwhelming. I personally always struggle with my food itinerary every time I come to town as I am consistently faced with this question: try something new, or return to somewhere tried and true? I typically end up finding the best balance possible and my most recent trip to South Carolina's low country was no exception. Earlier this week when looking for something new, I stumbled upon Workshop, an "exploratory food court," which is located about a 10 min drive up King Street from the heart of historic downtown Charleston. Everything there looked good, but I was drawn to Pink Bellies and their Garlic Noodles dish. The chef explained that this was their most popular dish, which felt validating and made my decision to pull the trigger even easier. Not only was this dish aesthetically pleasing, the combination of egg noodles, pulled pork, parmesan, sriracha, and pickled red onions proved to be one of the most uniquely satisfying noodle dishes I've ever experienced. Each ingredient played its role to perfection. Nothing was overdone and I appreciated how the pickled onions cut some of the heat from the sriracha. The beautiful presentation was second only to the terrific overall flavor. This is a must-try the next time you find yourself at Workshop.
