10/03/17 Bun Bo Hue is a spicy Vietnamese Beef Noodle soup that is not quite as popular as Pho but should not be overlooked...This noodle soup is beefy, spicy & has a robust broth. So far, the best Bun Bon Hue I’ve had was at Pho Dai Loi 2 located in Chamblee, GA just north of Atlanta. What makes this noodle dish Bigtime is the flavorful spicy broth and traditional ingredients such as congealed pig blood cakes and whole pig knuckles for extra chewing after all the noodles are gone (my favorite part of the meal) . The broth has a distinct shrimp paste, lemongrass, garlic and chili aroma with a dark beefy undertone that can only be described as like slurping beef bone marrow with a straw (no shame at all). The soup comes flanked with beef slices, Vietnamese pork sausage, blood cake, pork knuckles, and chewy thick round rice noodles. Garnished with white and green onions to taste. The broth is not thick and has just the right amount of spice, where water is only needed after the fifth or sixth bite. This dish sets you back $10 and be sure to ask for a container to take any leftover broth home to freeze for later use or just idolize on a mantle.... ✌🏽
