The original Pecos Pit draws a mix of blue-collar and white-collar workers to a former gas station across from Starbucks HQ for lunch. We're willing to sit outside at picnic tables, even in the winter, for the barbeque sandwiches too big and messy to be eaten by hand. Different from their central Texas counterparts, the west Texas style also favors beef brisket but slathers it in spicy yet sweet barbeque sauce. Get yours sliced to savor the brisket or chopped and "extra messy" if you want the sauce to dominate.
