Shrimp Tacos at Three Amigos in Charlotte, NC. Shrimp tacos are my go-to at Mexican restaurants, and Three Amigos had some tasty ones that didn’t disappoint. I love that the shrimp was nicely seared with black marks and had a nice char to them without being tough and overcooked. I also love that the corn tortilla skin was pan fried separately and had a little grease and char to it as well. Add a little onion and cilantro, and I can run those back all day. Rotation dish for sure. If they ever have a challenge or contest for eating these things, count me in.
