10/12/17 If you haven't read my former write up of a similar dish, I'll fill you in: I love chicken and waffles more than any other dish in the world. The combination of sweet and savory is the perfect flavor for me. So, I take any opportunity I can get to go to one of our local chicken and waffle places; a small chain called Dame's. At Dame's, they take the traditional chicken and waffles dish and add a unique twist to it. You can order your chicken as either wings, drumsticks, or boneless cutlets (my favorite) and they have many different kinds of waffles in addition to the different shmears (flavored butter spreads made in house). This time, I ordered a panko-crusted chicken cutlet on top of a vegan waffle (I believe it was a mix of applesauce and oats. It was wonderful regardless) with a vanilla-almond shmear and a side of rosemary mac n cheese. The mac n cheese was awesome. It was cheesy and with just enough rosemary to add a nice flavor note to the side dish. Now, the main course, which I smothered in honey. The cutlet was perfect. Very crispy and juicy. The waffle was not too crispy, which I liked, and added so much flavor to the dish; and the vanilla-almond shmear was perfect for it all. It came together so wonderfully. The sweetness packed into the waffle with the honey on top paired with the savory perfection of the chicken all together with the smooth vanilla-almond butter that added a little bit of bitter-sweet flavor to the mix was fantastic. I have yet to have anything disappointing at Dame's and I recommend it to everyone coming to visit from out of town. It's a great place with a ton of options (although that can be overwhelming sometimes) so you can't go wrong. This was definitely a bigtime bite.
