It's always a great day when you grab lunch with an old friend. Today's destination was The Matador in Redmond. Everything here exceeded my expectations. Matador is somewhat of a bold and intimidating name for those that speak Spanish. I found their menu and Mexican cuisine extremely creative and unique. Today I went with the fried brussel sprouts for my appetizer and butternut squash tacos for my entree. I was definitely apprehensive about trying the squash tacos but I couldn't have been more pleasantly surprised. The combination of sweet and spicy just perfect for my liking. The pumpkins seeds and cotija cheese adding great texture and flavor. It was a total vegetarian experience today and I left feeling both satisfied and energized. I am definitely coming back. Thanks to old friends Andrew Miller, Drew Warden, and Destry Hood for the new Mexican hang out!
