Burnt Ends are a Kansas City specialty, a delicacy in the barbecue world. And burnt ends are best at Arthur Bryant's Legendary BBQ shop on Brooklyn Avenue. The dish starts with tender, smoky, thick cubes of meat, burned on the ends for a little extra crisp and chewiness. The ends are tossed in a sauce that has more of a tomato marinara taste than a tangy barbecue flavor. All of that comes aboard a couple of pieces of soft, plain, white sandwich bread, a style that's also familiar in other parts of the barbecue world, for me namely Alabama. To top it off, burnt ends go great with a side of Arthur Bryant's potato-rich hand-cut French fries, soft and warm on the inside and crispy-crackly on the outside. Come with an appetite as this dish will fill you up!
