10/23/17 Biscuithead in Asheville, NC is a must try experience. The restaurant was started not too long ago in 2013 and already has a loyal following. This was my second visit to the place and like before, the line was a 15-20min wait. They are famously known for their buttery, ginormous biscuits served with everything from andouille sausage, fried chicken to thick cut bacon covered in various gravy and sauces. On this occasion, I went with the Fried Catfish Biscuit ($9). My eyes opened up as I saw my order sitting in the kitchen window from a far knowing that it would mine soon. The dish consists of a whole fried catfish filet, spicy homemade slaw, tomato, poached egg, and creole gravy served with their famous biscuit and is enough food feed two hungry kids or fill up just one big grown up kid like myself. The first step is to break open the poached egg and allow the yolk to cascade down the biscuit/catfish mountain side. Only after the yellow yolk river has reached the plate and coated a side of the mountain can you begin. The biscuit has a light, airy exterior and a denser, buttery center which holds its own to any gravy or sauces without getting soggy. In between the biscuit halves is the fried catfish, which was coated with a perfectly seasoned salt and pepper crust that remained crispy throughout the meal. The catfish filet was fresh, flaky and moist pairing beautifully with the tomato salsa and creole gravy. The sweet acidity of the tomato and salty heat from the gravy is a great balance. The poached egg and its silky yolk binded all the ingredients together for this masterpiece. Biscuithead makes their own Chocolate Habernero sauce which adds a little sweet heat to your dish if you prefer. The sauce is delicious but should be used in moderation because the heat does catch up to you. As my brother will attest, “I’m not crying, you’re crying, ok it’s the sauce”... BTB for sure ✌🏽
