The Soul Gastrolounge was packed when I got there, clearly the locals know how good the food is there. I'd recommend calling ahead of time for a table, when I got there they told me the wait would be an hour and a half. Luckily I was able to snag a seat at the bar almost immediately. There were so many good looking items on the menu, but these tacos were recommended to me in particular (with good reason). I would never think to combine Pork belly and Watermelon in a taco, but its a perfect combination of flavors. The Pork was cooked perfectly, it was so tender with a nice glaze on it. The watermelon is so light and adds a perfect sweetness to go with the Pork with every bite. The tortilla captures any excess sauce and adds a nice counter to the strong sweet flavors of the glaze and watermelon. I'm normally not a big fan of sweet dishes that aren't desserts, but this dish finds an exceptional balance of different ingredients. I'd strongly recommend this place as long as crowds don't bother you. I'll be sure to be back the next time I'm in town.
