After my first visit to Summer Memory Station the day before to get the Durian Crepe Cake, I felt I had to go back before leaving town to try a childhood favorite I saw on the menu earlier. The Taro Coconut Tapioca Dessert Soup ($5) is a chilled dessert dish I remember fondly my mother would make for us on Saturday mornings during summer break. The dish is made by combining tapioca pearls with coconut milk, rock sugar and huge chunks of taro root and simmered/reduced to a smooth, creamy sweet soup. Summer Memory Station allows you to add various fresh fruits so I went with mango, honeydew and lychee and never looked back. The coconut milk base is sweet and light with tiny pearls of tapioca providing chew. The taro roots are thick, chewy and have a starchy consistency that works well against the soup to balance out the sweetness. Mango, being my favorite fruit, is the perfect medium to add a little savory and sour taste to the dessert, with the sweet honeydew and lychee giving more depth and texture. The sweet soup has a thicker, creamier consistency when served chilled and is the perfect dessert for ending the night.
