Went to Kabuto before I saw Rich's report based on recs from locals. When I went they had 6 types of toro in the a la carte menu [hagashi-otoro (premium silky fatty tuna), shown above...aburi-toro (seared fatty tuna), jabara-toro (bellows belly), o-toro (premium fatty tuna), kamashita-toro (mabled fatty tuna), and chu-toro (medium fatty tuna)]. I actually ordered from the mid-grade omakase menu, but supplemented with a la carte. (I echo Rich's suggestion that a la carte is the way to go- the grill portion of omakase is unnecessary). Hagashi-otoro is a HOF dish- my description won't do it justice but it was like a melting of ocean freshness and buttery richness that I have never before tasted. I inadvertently closed my eyes while eating this just to focus on the amazing flavors. You'll notice in the picture the sinew in the tuna is painstakingly removed by hand- testament to the quality of the sushi chefs.
I made a reservation a week before and was lucky to secure a spot. The restaurant itself is in a nondescript strip mall filled with other Japanese eateries- don't let the location fool you. This is some of the best sushi on the planet.
