From it's website name (realdopebbq.com) to its funky item names which pay tribute to all things South, Slab BBQ oozes swagger like one of four different barbecue sauces from its stacked sandwiches. The Texas Trill contained brisket, sausage, and pork rib meat topped with onions, pickles, jalapenos and Backyard Red barbecue sauce. There's an option to add some Fritos to the top of the sandwich, which I did not hesitate to add. At first, this sandwich felt like it might suffer from "too much of a good thing" syndrome, but I'm happy to report that this sandwich is a superteam which put on a dominant championship performance from first to last bite. The smoky brisket, spicy, crumbly sausage, and tender pork rib worked well together and tasted great individually as huge pieces fell off the sandwich. The onions, pickles, and jalapenos added a standard yet essential flavor of slight sourness and mild heat, and the Fritos provided a salty crunch which gave the sandwich a Frankenstein's Frito Pie vibe. The Backyard Red was sweet and tangy, and I tried and enjoyed the other three sauces as well (mustard-based, mayo-based, and sriracha-based). In a state and city where barbecue sandwiches are as common and plentiful as three point attempts by 6th Man of the Year candidates, the Texas Trill brings overconfidence, calls its shot from 30 feet away and drills it.
