The Coleman building in Seattle’s Pioneer Square area is home to a number of solid restaurants. If you are into Korean and Japanese food, you have to hit Bibimbap on the walkway to the Seattle ferry terminal. As the name suggests, the restaurant specializes in Bibimbap (Korean for “mix-it-up”) dishes. One of my favs is the Dolsot Bibimbap which is served in a hot stone bowl. The bowl keeps the ingredients hot and makes the rice on the bottom just a bit crunchy. With fresh veggies and the protein of your choice, this is already a pretty healthy dish. But I like the fact that I can sub out the white rice and get some healthy brown rice into the game. I’m always satisfied when I have this dish for lunch.
