What is the first dish I ever order when visiting Beijing for the first time? Peking Duck. The duck is brought out and intricately carved table-side. The duck meat is very tender, the skin is thin but crunchy and not overly fatty or oily. The waiter with a pair of chopsticks takes the perfectly cooked duck and places it on a thinly warm pancake. The condiments served in the pancake with the duck is a small dab of sweet bean sauce, a strand of spring onion and cucumber, and tiny cubes of sugar. You could eat a whole order to yourself and still want more because it is that good and doesn't feel like a heavy meal on your stomach.
