Torchy's is a Texas taco truck success story, providing a variety of reliably good Tex-Mex tacos in several joints across Austin and the state. Torchy's offers a Taco of the Month, and to commemorate the holiday season they offer the "South Pole" in December. The South Pole is everything unique and eclectic about Torchy's experimental spirit in one taco: shredded leg of lamb, fresh avocado, french fried onions, cotija cheese, Diablo sauce, cranberry habanero jam, cilantro and a lime wedge on a flour tortilla. Try to comprehend that last sentence. Take a look at all the color in that photo, which is as vibrantly hideous as the Spurs' fiesta colors (or an ugly Christmas sweater). Despite all the conflicting ideas, colors, and flavors which seem more like the result of a fever dream caused by too much eggnog, this taco is surprisingly great. The shredded lamb is crisped up to the point of being almost pork belly-like while retaining it's distinct taste. The red cranberry habanero jam is fruity and sweet, and while the habanero is barely detectable, the bold orange Diablo sauce brings an angry, peppery heat that lingers past its welcome (like relatives during the holidays). The rest of the ingredients provide enough individual flavor, texture, and crunch to not feel overcrowded or excessive. A miracle which unfortunately only comes once a year.
