This isn't my first food scouting report on guacamole - and it most likely won't be my last. I know it may seem a little 'basic,' but who doesn't want to know where the best guac in any given city can be found? If you're looking for it in Lexington, KY, look no further than Corto Lima (at the intersection of short and lime downtown - get it?!). This simple (I hate an overly chunky guac where someone seems to be trying too hard...unless the chunkyness stems from the bacon...and if that sounds good to you, then read my report on bacon guacamole) recipe just includes roasted garlic, red onion and barrel sea salt. The chips are crispy, warm and served fresh. This dish is meant for sharing, but I could easily have "ran it back" (R. Cho voice) three or four times by myself. The cocktail program is great here, as well, so don't miss out on this big time spot!
