Ciao Osteria is located in a strip mall/shopping center in Centreville, VA just outside of DC. This place has been known for their great authentic Italian dishes and the roasted bone marrow appetizer is no exception. Four large bone marrow pieces are served with crusted buttery bread. The marrow is a perfect balance of meaty and buttery. Each scoop from the bone releases a soft, gelatin of marrow that has been slightly infused with olive oil and thyme. Spread the marrow over the accompanying bread and each bite of the “meat butter” provides a silky, smooth, rich flavoring. This is a can’t miss dish.
