I love all Vietnamese noodle soups, but Bun Bo Hue is easily my favorite and Baoguette's version is the one I crave the most often. This bigtime dish balances spicy, sour, salty and sweet, and adds the perfect burst of lemongrass flavor. Some versions are served with cubes of congealed pigs blood, but thankfully this one is not. What you will get is a seemingly endless bowl of tender beef, thick vermicelli noodles, diced green onions, and raw sliced onions. Add some lime, cilantro and additional chilli sauce and this soup will be perfect until the very last bite.
