Pan-Roasted Chicken Gizzards at Bestia in Los Angeles, CA. I know some people aren’t fans of chicken gizzards, but these will absolutely change your mind! Tender on the inside with a nice sear and crispiness on the outside, they are amazing and don’t have any of the tough gristle that you typically find in gizzards. Accompanied by Belgian endive (a leafy vegetable used in salads), roasted beets, and aged capra sarda cheese, the textures and flavors work really well together. Although soft in texture, the endive has a light crunch, and along with the beets, provides a nice contrast to the gizzards. This is a Bigtime dish, and my favorite thing on the menu! Bestia is a vibrant, highly acclaimed Italian restaurant in the Arts District close to downtown LA. Hard to get into unless you book well in advance, but they also take walk-ins in the bar area and you can enjoy a drink on their patio while you wait. I also loved their Mussels & Clams and Lamb Ragu.
