Tom Douglas is probably Seattle’s best-known chef. I love all of his restaurants. While Serious Pie is actually his pizza place (and not a pie shop as you may have thought) they serve the same famous triple coconut cream pie for dessert as they do at his more upscale restaurants.
I am not a huge coconut lover but this pie will convert any non coconut lover. The crust is light, buttery & flakey. The coconut pastry cream is silky & smooth done in a custard style & then topped with whipped cream, white chocolate shavings & toasted coconut flakes.
I have one rule at any Tom Douglas restaurant, save room for coconut cream pie!!!
Insider tip...if you’re walking around downtown Seattle in need of a sugar fix, pop into Dahlia Bakery & get a mini coconut cream pie bite! Just a bite-sized piece!
