Cúrate, located in the heart of Downtown Asheville and run by a James Beard semi-finalist and F & W Best New Chef, is one of the top spots in the city and has some truly delicious tapas. I love this dish of theirs. There is a mild pork sausage that has a great char on it and a bright aioli. But the best piece of the dish are the sauteed white beans. These beans develop a really nice crust and almost have a deep fried feel, but keep a fluffy interior. And they are beautifully seasoned - the perfect salty little morsels. Getting a forkful of beans, meat and a slather of aioli all at once is about as good as it gets. This is a must-order at Cúrate in my opinion.
