My wife and I went for a walk through Seattle's Ravenna Park today. On the way out, we headed down to University Village to grab some lunch. Not knowing our destination we were fortunate to spot the Veggie Grill first thing. Its a Vegan restaurant with some incredibly tasty options. There are three locations in the Seattle area (U-Village, Lake Union, and downtown). The Quinoa Power Salad was frankly an extremely pleasant surprise today. Quinoa with diced red onions, bell peppers, avocado, almonds, carrots, cannellini beans, hemp seeds, kale, and romaine lettuce tossed in a light citrus vinaigrette dressing. The best part about eating in twos is sharing food. We also ordered the Masala Bowl which was equally fantastic (spiced chickpeas with cauliflower and grains in a curry sauce). Very nice options for the healthy eater.
