This mountain trout served at Twigs was absolutely marvelous! It was buttery, flaky, lemony, and just was a pleasure to eat. It was served with capers, a citrus beurre blanc, salad, chef’s choice of vegetables, which in this case was deep fried brussel sprouts, and a choice of smashed new potatoes or a baked sweet potato. Smashed new potatoes are pictured. This was one of the best fish dishes I’ve ever had! I can’t wait to order this again!
