Red Snapper Tiradito at Casa del Lago in Playa del Carmen, Mexico. I loved this Red Snapper Tiradito, as it was filled with some unique ingredients that I hadn’t experienced before. Super fresh sashimi grade red snapper was accompanied by chayote (a pear-shaped fruit along the lines of honeydew), green tomatoes, fennel, garlic, onions, herbs, peppers, and recado negro (charred dried chiles). Amazing blend of flavors, as the snapper, chayote, and green tomatoes complemented each other well and the recado negro added a very slight but distinct, taste to the dish. The resulting dish was one of bold, clean flavors that was sweet, tart, and refreshing with a tad of spice all at the same time. Casa del Lago is located at the Rosewood Mayakoba, one of my favorite resorts in the world. Terrific property with impeccable service and attention to detail.
