In Situ is a restaurant inside the Museum of Modern Art in SF. It is owned by one of the best chefs in the world---Corey Lee (who also has a 3 Michelin starred restaurant---Benu). Corey went to the greatest chefs in the world and asked them for one dish, and Corey and the In Situ team precisely re-create the dishes. This dish has potato, braised cuttlefish, and ink and is from Massamiliano Alajmo of 3 Michelin starred Le Calandre in Rubano, Italy. There aren't an overabundance of ingredients, but the simplicity leads to sublime flavors. In Situ is one of my favorite restaurants in the USA.
