Salmon Tartare at Aix En Provence. This was by far the best Tartare I have ever had. It is served with lavash (thin cracker) on the side and has some veggies on top. The pepper sprinkled on adds an extra tang to it. The restaurant is very nice and rather fancy. I also had the lobster spaghetti which was also delicious, however the Tartare was my favorite. I had to run this dish back because it was so tasty!
