          My second time at the Living Kitchen here in Charlotte.   A raw vegan restaurant with some really creative menu selections.   Kudos to my good friend Matt McKay for directing me here.    Today I went with the Avocado Basil Sandwich.   It comes on either toasted multi-grain bread or wrapped in collard greens.   Today I went the healthy route with the collard leaves.  Next time trying the multi-grain bread.  It's packed with fresh slices of avocado, tomato, red onion, sprouts, basil, lemon-parsley hummus, and cashew sour cream.  It easily meets my top 3 criteria: healthy, flavorful, and filling.  It came with a side of cauliflower rice, accented with walnuts and garlic and garnished with black sesame seeds.   Great rotation meal!
